“Louise was an internationally recognized expert in pectin chemistry and functionality. She was deeply interested in removing barriers to healthier food choices by working to develop delicious, healthy, shelf-stable foods. She taught and mentored students at the University of Florida, University of Georgia, Louisiana State University, and Korea University. She served as an associate editor for Food Hydrocolloids and Food Hydrocolloids for Health. She was elected a fellow of the Institute of Food Technologists, the International Academy of Food Science and Technology, and the Institute of Food Science and Technology.”—Cathy Culver, friend and colleague
